I have been self-hosting paperless/paperless-ngx for two years, and I absolutely love the community involvement in getting things done (see the number of merged PRs).
There is also this more established software called Mayan EDMS, which has a different dev model centered around the lead maintainer. I still have an old Mayan install for other stuff that requires versioning.
However, the topic is a bit different: I don't understand the public relations practice of the Mayan project. The lead "benevolent" dictator author's reputation was already tainted by his involvement in Gamergate and drama filled war with code of conduct.
